SICILIAN HONEYDEW HONEY
In environments with poor availability of nectariferous plants and flowers, foraging bees, the worker bees in charge of harvesting, do not feed on the nectar of flowers but use “honeydew” to produce honey that takes precisely the name of “honeydew honey”. Specifically, honeydew is a viscous and sugary substance that forms on trees. It is produced by small insects that feed on the sap of the trees and secrete honeydew, an element with a peculiar brown colour rich in nutrients such as sugars and minerals.
Because of its many beneficial properties (antibacterial, antioxidant, pre-biotic and high mineral content), honeydew honey can be recommended for daily use, for example as a sweetener, just like nectar honey.

ORGANOLEPTIC ASPECTS:
COLOUR: Dark, brown, amber
SMELL: Peculiar, with medium intensity
FLAVOUR: Taste of caramel, cooked fruit and herbal syrup. In the mouth the taste is persistent and may also have an acid and salty note, of resin, of damp wood, or incense
CONSISTENCY: Very slow crystallization and low water content, as the bees find the honeydew on the leaves and, since they collect it in summer, the relative humidity of the environment is usually low and this also affects the final product
CONSERVATION: Room temperature sheltered from the sun
