GRAPE: Ciliegiolo
PRODUCTION AREA: Vulcano Island, Aeolian Islands (ME) – Sicily, Italy
TASTING NOTES: The wine is ruby red with violet reflections.Fruity with notes of cherry and raspberry with a good structure
HARVEST: The grape harvest takes place in the first week of September. After a careful selection, the grapes are hand picked, placed in crates and immediately transported to the cellar to be processed
PRODUCTION PROCESS: The grapes are de-stemmed and crushed. Then transferred to vinification tanks where they stay cold for 24 hours, “cold maceration”, in order to extract the aromatic part. The alcoholic fermentation begins and it is completed after several days of maceration. The wine obtained is left in wooden barrels to mature barrels to mature
